Quinoa Salad


  • ½ cup White Quinoa
  • 1 C. water
  • 1 Leek
  • ½ Bunch of Broccoli
  • 1 Big tomato
  • Salt
  • Pepper
  • Oregano
  • Olive oil


1 – Soak the quinoa overnight, or for a minimum of 8h, change the water frequently, before use rinse it well and discard the water;

2 – In a pan add the quinoa and 1 cup of water, pinch of salt and leave to cook in medium heat for 10 minutes;

3 – Cut the stem of broccoli in small pieces, and set aside, cut the flours bits of broccoli in smaller pieces and steam it (put steam on top of quinoa’s pan) for about 5 minutes;

4 – Cut the leek and tomato in small parts,

5 – In a frying pan add some water and all the vegetables (leek, tomato and broccoli stems) let it cook, mixing occasionally,

6 – Add the steam broccoli and mix carefully,

7 – Finally add cooked quinoa to the mix vegetables and seasoning with some olive oil, pepper and oregano.
